Cantering my horse??? Frankie?

Okay so today when i was riding Frankie he was doing much better than our previous ride. We were working with polls. He was doing great at the walk and trot but as soon as i asked for the canter he got all weird and bumpy. His canter was not normal. I am not exacty sure what he was doing but his head was high in the air and he would turn his head at a angle abd he was obiously not behaving well. Could anyone help me with this. Tips on how i could fix this. what could he be doing? anything helps!
